Montevertine is situated in the heart of the Chianti hills at 425 meters high, in the municipality of Radda in Chianti, in the vineyards are bred exclusively the traditional varieties of the Chianti area: Sangiovese, Canaiolo and Colorino. In Montevertine, simplicity, respect, attention to every detail and savoir-faire are the guide of every day, the vinification method is extremely traditional and is always the same used since the first harvests, hand-picked grapes are fermented in tanks of vitrified cement, without temperature control and performing two daily pumping over to keep the cap of the pomace wet and obtain a slow extraction of the tannins from the skins.
After racking, the wine undergoes malolactic fermentation in vitrified cement tanks. After the malolactic fermentation, the wines rest in wooden barrels for a period of about two years. For aging we use Slavonian and Allier oak barrels with capacities from 5.5 to 18 hectoliters and Allier 225 liter barriques. The wines are never filtered and the bottling takes place by fall.
