The Winery is characterized by two Cellars, one is historic and one is recently built. Located in the more modern cellar is the “reception room”, where the first processing of the grapes takes place. In the adjacent rooms are located the still tanks for fermentation. Also located in this cellar are the final refining rooms, the bottling plants and the storage warehouse.
The historic cellar is part of the basement of an ancient tower, very close to the Villa Veneta. This charming location has been restored and it is used as a refining hall for red wines. In this cellar the red wines age in barrels of French and Slavonian oaks, of different capacities. The permanence in wood varies depending on the vintage and on the type of wine.
he 120 hectares surrounding the commercial Farm are part of a natural park of limestone and red soil wich is rich in minerals. This is a difficult, but generous land, which offers an ideal environment for cultivating vines. Its dry breezy microclimate, with a good temperature range, is also helped by being close to the sea. The Bora, the local wind, blows often and thus keeps the vines healthy and ensures an ideal climate for the grapes. It is in this setting that the Farm nurtures its vineyards, which occupy 40 of the central hectares of the property.
Thanks to these conditions, Karst area is a unique and unrepeatable place. In Castelvecchio’s wines you will taste the typical nature of this terroir. 600 olive trees of various cultivars for producing a very fine extra virgin olive oil stand next to the vineyards.
