BIRRIFICIO STATALE 343
The Bottarelli Igor Farm is located in the municipality of Canneto sull'Oglio in the territories of the upper Mantua bordering the province of Brescia and Cremona. Completely organic, it is certified by the BIOAGRICERT control body. Our goal is the production of healthy and high quality food, thanks to a meticulous management that excludes the use of any non-natural product (GMO seeds, chemical fertilizers, etc.). For this reason we use almost exclusively the company's products, in application of the closed cycle concept. Furthermore, the company aims at restoring biodiversity, respecting seasonality and safeguarding local products. We cultivate barley distich from beer of the Tunika variety that will soon become Bottarelli barley, thanks to the reuse every year of the seeds produced and selected in the farm. The phase following the harvest is the deposit in large "container" sacks where our barley rests for about three months before going to malting. To malt our cereal we have entrusted to a counter-contractor ITALIAN, for this reason the barley is brought to Tuscany, and more precisely in the province of Arezzo, where it will undergo the last step of processing. Once worked, our barley becomes Pilsner barley malt, which will be left to stand for a month and then used in the production of our beers. In 2015 we planted two varieties of hops, Hallertau Tradition and Cascade; about 250 plants that produce part of the "cones" used in the brewing process. Other farm productions are: vegetables, figs, strawberries and small fruits; we also produce modest quantities of peaches, apricots and plums.
