Designed and built exclusively to produce Metodo Classico TRENTODOC and Metodo Charmat sparkling wines, the cellar is a single, high-tech, highly functional structure. It was built in 1993, on four levels: the lowest level underground is set aside for the ageing of TRENTODOC sparkling wines; all further processing is done on the floor above it: riddlingand disgorging, while an adjacent area houses the pressurized tanks for the production of Charmat method sparkling wine. The bottling and packaging lines are located on the ground floor. This is a truly unique, futuristic cellar, the jewel in the crown of Trentino winemaking.
