VINIFICATION AND REFINING
Strict pressing of whole grapes with fractional separation of the musts. First fermentation in stainless steel at a controlled temperature and with selected yeasts. The cuvèe, union of the vinified bases obtained from the vineyards of the property, is realized shortly before the draft, which usually takes place in the months of April and May. Generally after 24 months when the ripening of the Brut has reached the desired characteristics, disgorgement is added with the addition of the "Liqueur d 'expedition" reaching 5-6 g / l of residual sugar. After a stop of about three months in the cellar for refining, the Franciacorta Brut DOCG is dressed and is ready for shipping
