VINIFICATION AND REFINING runello is obtained from the vinification of 100% Sangiovese grosso grapes. The vineyards are cultivated with spurred cordon and have an average age of 15 years and a plant density of 4500 plants per hectare. The grapes are harvested regularly, in the first fortnight of October. The harvest is carried out manually, with control and waste in the vineyard of any bunches that are not intact. Fermentation takes place in the cellar, in steel tanks with a capacity of 5000/10000 liters. It lasts from 18 to 20 days during which daily pumping over and punching are done. The temperature of the must is controlled and maintained within the limits by external cooling to the tanks, the wine thus obtained is then peeled and placed in oak barrels for four years.
